Rice Pilaf Preparation

    Sauté the Aromatics

    In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent, about 3-4 minutes.

    Cook the Rice

    Add the rice to the saucepan, stirring to coat it in the oil. Cook for an additional 2 minutes, allowing the rice to lightly toast.

    Add Broth and Seasoning

    Pour in the vegetable broth and add salt and black pepper. Bring to a boil, then reduce the heat to low. Cover and simmer for 15-20 minutes until the rice is tender and the liquid is absorbed.

    Fluff and Set Aside

    Once cooked, remove from heat and let it sit, covered, for 5 minutes. Then fluff the rice with a fork and set aside.

Salad Assembly

    Prepare the Vegetables

    In a large bowl, combine the chopped romaine lettuce, diced tomatoes, sliced red onion, and diced cucumber.

    Add Beans and Olives

    Add the drained garbanzo beans and sliced kalamata olives to the vegetable mixture. Toss gently to combine.

    Top with Rice and Feta

    Spoon the prepared rice pilaf on top of the salad mixture. Sprinkle with crumbled feta cheese.

    Serve
