Method

Potato Preparation

  1. 1

    Prepare the Potatoes

Wash and peel the Russet potatoes. Cut them into thin strips to resemble fries.

  2. 2

    Soak the Potatoes

Place the cut potatoes in a bowl of cold water for at least 30 minutes to remove excess starch.

  3. 3

    Preheat the Oven

Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.

  4. 4

    Season the Potatoes

Drain the soaked potatoes and pat them dry. In a large bowl, toss the potatoes with olive oil, salt, black pepper, and paprika until evenly coated.

  5. 5

    Bake the Fries

Spread the seasoned potatoes in a single layer on the prepared baking sheet. Bake for 25-30 minutes, turning halfway through, until golden brown and crispy.

Feta Topping

  1. 6

    Prepare the Feta

While the fries are baking, crumble the feta cheese into a bowl.

  2. 7

    Add Fresh Herbs

Chop the fresh parsley and add it to the crumbled feta.

  3. 8

    Mix with Lemon Juice

Drizzle the lemon juice over the feta and parsley mixture, and gently mix until combined.

Serving

  1. 9

    Assemble the Dish

Once the fries are baked and crispy, remove them from the oven and transfer to a serving platter.

  2. 10

    Top with Feta

Spoon the feta mixture generously over the hot fries.

  3. 11

    Add Optional Garnishes

Sprinkle chili flakes and drizzle extra olive oil over the top if desired.

  4. 12

    Serve Immediately

Serve the feta fries immediately while they are hot and crispy.
