Falafel Preparation

    Prepare the Chickpeas

    Drain and rinse the canned chickpeas thoroughly. Let them sit in a colander to remove excess water.

    Mix Ingredients

    In a food processor, combine the chickpeas, parsley, cilantro, minced garlic, ground cumin, ground coriander, baking powder, salt, black pepper, and flour. Pulse until the mixture is well combined but still slightly chunky.

    Form the Falafel Balls

    Using your hands, form the mixture into small balls or patties, about 1.5 inches in diameter. Place them on a parchment-lined plate.

    Heat the Oil

    In a deep skillet or pan, heat the vegetable oil over medium-high heat until hot (around 350°F/175°C).

    Fry the Falafel

    Carefully add the falafel balls to the hot oil, frying in batches to avoid overcrowding. Fry for 4-5 minutes until golden brown and crispy on all sides. Remove and drain on paper towels.

Yogurt Mint Sauce Preparation

    Combine Sauce Ingredients

    In a mixing bowl, combine the plain yogurt, chopped mint leaves, lemon juice, minced garlic, and salt. Stir until well mixed.

    Chill the Sauce

    Cover the bowl with plastic wrap and refrigerate the yogurt mint sauce for at least 30 minutes to allow the flavors to meld.
