Falafel Preparation

    Blend the Ingredients

    In a food processor, combine the canned chickpeas, parsley, cilantro, garlic, cumin, coriander, baking powder, salt, and black pepper. Pulse until the mixture is coarsely blended but not pureed.

    Form the Mixture

    Transfer the mixture to a bowl and stir in the all-purpose flour. Mix until just combined. Refrigerate the mixture for at least 30 minutes to help it firm up.

    Fry the Falafel

    Heat the vegetable oil in a deep skillet over medium heat. Once hot, form the chickpea mixture into small balls or patties. Fry them in batches for about 3-4 minutes on each side or until golden brown. Remove and drain on paper towels.

Assembling the Pita

    Prepare the Pita

    Warm the pita bread in a dry skillet or microwave until soft and pliable.

    Add the Toppings

    Spread a layer of hummus on the inside of each pita. Add a generous amount of romaine lettuce, diced tomatoes, and sliced red onion.

    Add Falafel and Sauce

    Place 2-3 falafel balls inside each pita and drizzle with tzatziki sauce.

    Serve

    Serve immediately while warm, and enjoy your homemade falafel pita!
