Chocolate Mousse

    Melt the Chocolate

    In a heatproof bowl, melt the dark chocolate over a pot of simmering water, stirring until smooth. Remove from heat and allow to cool slightly.

    Whip the Cream

    In a separate bowl, whip the heavy cream until soft peaks form.

    Combine Ingredients

    In another bowl, whisk together the egg yolks, sugar, and vanilla extract until pale and fluffy. Gradually fold in the melted chocolate and then gently fold in the whipped cream until fully combined.

    Chill

    Pour the mixture into serving dishes and refrigerate for at least 2 hours to set.

Fruit Tart

    Prepare the Pastry

    Preheat the oven to 180°C (350°F). Place the shortcrust pastry in a tart pan and prick the bottom with a fork. Bake for 15 minutes or until golden, then let cool.

    Add the Custard

    Once the pastry has cooled, spread the prepared custard evenly over the base.

    Top with Berries

    Arrange the mixed berries on top of the custard in a decorative manner.

    Dust with Sugar

    Sprinkle powdered sugar over the tart for a sweet finish. Chill in the refrigerator before serving.

Panna Cotta

    Bloom the Gelatin

    In a small bowl, sprinkle the gelatin powder over 2 tablespoons of cold water and let it sit for about 5 minutes to bloom.

    Heat the Cream and Sugar

    In a saucepan, heat the heavy cream, milk, sugar, and the scraped seeds from the vanilla bean (or vanilla extract) over medium heat until sugar dissolves, but do not boil.

    Combine Gelatin and Cream

    Remove from heat and stir in the bloomed gelatin until fully dissolved. Pour the mixture into serving cups and refrigerate for at least 4 hours to set.

    Once set, serve the panna cotta chilled, optionally with a berry sauce or fresh berries on top.
