Method

Chicken Souvlaki

    Prepare Chicken Marinade

    In a bowl, combine olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper. Whisk until well combined.

    Marinate Chicken

    Cut the chicken breast into 1-inch cubes and add to the marinade. Cover and refrigerate for at least 30 minutes, or up to 2 hours.

    Prepare Skewers

    Soak wooden skewers in water for at least 15 minutes to prevent burning. Thread marinated chicken onto the skewers.

    Grill Chicken

    Preheat the grill to medium-high heat. Place the skewers on the grill and cook for 10-12 minutes, turning occasionally, until the chicken is cooked through and has grill marks.

Tzatziki Sauce

    Prepare Cucumber

    Grate the cucumber and squeeze out excess water using a clean cloth.

    Mix Tzatziki Ingredients

    In a bowl, mix Greek yogurt, grated cucumber, minced garlic, dill, olive oil, and salt until well combined. Refrigerate until ready to serve.

Side Salad

    Prepare Salad Ingredients

    In a large bowl, combine mixed greens, halved cherry tomatoes, sliced cucumber, diced red onion, and crumbled feta cheese.

    Dress Salad

    In a small bowl, whisk together olive oil, red wine vinegar, salt, and black pepper. Drizzle over the salad and toss gently to combine.

Pita Bread

    Warm Pita Bread

    Warm the pita bread in a dry skillet over medium heat for about 1-2 minutes on each side until soft and pliable.

Rice Pilaf or Fries

    Prepare Rice Pilaf (if chosen)

    In a saucepan, bring chicken broth to a boil. Add rice, reduce heat to low, cover, and simmer for 15-18 minutes or until rice is cooked and liquid is absorbed.

    Prepare French Fries (if chosen)

    Prepare french fries according to package instructions. For feta fries, top fries with crumbled feta cheese just before serving.
