Marinating the Lamb

Prepare the Marinade
In a bowl, combine olive oil, minced garlic, lemon juice, dried oregano, ground cumin, salt, and black pepper to create a marinade.

Marinate the Lamb
Place the leg of lamb in a large zip-top bag or a shallow dish. Pour the marinade over the lamb, ensuring it is well coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, or overnight for best results.
Cooking the Lamb

Preheat the Grill
Preheat your grill to medium-high heat.

Cook the Lamb
Remove the lamb from the marinade and let it come to room temperature. Grill the lamb for about 15-20 minutes on each side, or until it reaches your desired level of doneness (internal temperature of 60°C for medium-rare).

Rest the Meat
Once cooked, remove the lamb from the grill and let it rest for 10 minutes before slicing.
Serving the Souvlaki

Prepare the Pita
Warm the pita bread on the grill for a minute or until soft.

Assemble the Souvlaki
Slice the rested lamb into thin strips. Place a few strips of lamb in each pita, and top with diced tomatoes, cucumbers, red onion, and a generous dollop of tzatziki sauce.

Serve immediately while warm with extra tzatziki on the side if desired.
