    Prepare the Mussels

    Rinse the mussels under cold running water, scrubbing the shells to remove any debris. Discard any mussels that are open and do not close when tapped.

    Make the Coconut Broth

    In a large pot, heat a tablespoon of oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute. Stir in the Thai red curry paste and cook for another minute.

    Add Coconut Milk

    Pour in the coconut milk and bring to a simmer. Add lime juice, salt, and black pepper to taste. Let it simmer for 5 minutes.

    Steam the Mussels

    Add the cleaned mussels to the pot, cover, and steam for about 5-7 minutes or until the mussels have opened. Discard any mussels that remain closed.

    Serve

    Stir in chopped cilantro and serve the steamed mussels in bowls with the broth. Serve with grilled bread on the side.
