    Cook the Pasta

    In a large pot of boiling salted water, cook the pappardelle according to package instructions until al dente. Drain and set aside.

    Sauté the Steak Tips

    In a large skillet, heat olive oil over medium-high heat. Season the steak tips with salt and pepper. Add the steak tips to the skillet and sauté until browned and cooked to your desired doneness, about 3-4 minutes per side. Remove from skillet and set aside.

    Cook the Vegetables

    In the same skillet, add the chopped onion and sliced mushrooms. Sauté until the onions are translucent and mushrooms are tender, about 5-7 minutes. Add minced garlic and sauté for another minute.

    Prepare the Sauce

    Pour in the beef broth and bring to a simmer. Let it reduce slightly for about 5 minutes. Stir in the sour cream until well combined. Add the sautéed steak tips back to the skillet and heat through. Adjust seasoning with salt and pepper to taste.

    Combine and Serve

    Add the cooked pappardelle to the skillet and toss to coat in the sauce. Serve hot, garnished with fresh chopped parsley.
