    Prepare the Rice

    Rinse the Calrose rice under cold water until the water runs clear. Add rice to a pot with 1.5 cups of water. Bring to a boil, then reduce heat to low and cover. Cook for 18-20 minutes or until water is absorbed. Let it sit for 10 minutes, then fluff with a fork.

    Prepare the Ahi Tuna

    Dice the ahi tuna into small cubes. In a bowl, mix with ponzu sauce and a pinch of salt. Set aside to marinate while preparing other ingredients.

    Make the Spicy Mayo

    In a small bowl, combine mayonnaise and sriracha sauce. Adjust the amount of sriracha to your desired spice level.

    Prepare the Avocado and Jalapeño

    Slice the avocado in half, remove the pit, and scoop out the flesh. Mash it in a bowl with a fork, adding salt to taste. Thinly slice the jalapeño.

    Assemble the Poke Bowl

    In a large bowl, start with a layer of steamed rice, then add marinated tuna, mashed avocado, jalapeño slices, and a generous scoop of wakame seaweed salad. Drizzle spicy mayo on top and sprinkle with sesame seeds.

    Garnish with additional sesame seeds if desired and serve immediately.
