Method

Cooking Instructions

  1. 1

    Prepare the Steak

Season the flat iron steak with salt and black pepper on both sides.

  2. 2

    Sear the Steak

In a large skillet, heat olive oil over medium-high heat. Once hot, add the steak and sear for 4-5 minutes on each side for medium-rare. Adjust time for desired doneness.

  3. 3

    Rest the Steak

Remove the steak from the skillet and let it rest for at least 5 minutes before slicing.

  4. 4

    Make the Red Wine Demi

In the same skillet, add the red wine and scrape up any browned bits from the bottom. Bring to a simmer and reduce by half.

  5. 5

    Add Beef Broth

Stir in the beef broth and continue to simmer until the sauce thickens. Finish by whisking in butter for richness.

  6. 6

    Prepare the Vegetables

Steam or sauté the baby French carrots and seasonal vegetables until tender, about 5-7 minutes.

  7. 7

    Plate the Dish

Slice the rested steak and arrange it on a plate. Drizzle the red wine demi over the steak and serve with the cooked vegetables.
