Pretzel Dough

Method

Pretzel Preparation

  1. 1

    Prepare the Dough

In a large bowl, combine warm water, sugar, and yeast. Let it sit for about 5 minutes until foamy. Then, mix in salt and gradually add flour until a dough forms. Knead for about 5-7 minutes until smooth.

  2. 2

    First Rise

Place the dough in a greased bowl, cover with a damp cloth, and let rise in a warm place for about 1 hour, or until doubled in size.

  3. 3

    Shape the Pretzel

Preheat oven to 450°F (230°C). Punch down the dough and divide into 4 equal pieces. Roll each piece into a long rope (about 20 inches) and twist into a pretzel shape.

  4. 4

    Baking Soda Bath

In a large pot, bring 10 cups of water and baking soda to a boil. Carefully drop each pretzel into the boiling water for about 30 seconds, then remove and place on a baking sheet lined with parchment paper.

  5. 5

    Bake the Pretzels

Sprinkle each pretzel with hawaiian black salt and bake for 12-15 minutes or until golden brown.
