Cauliflower Steak and Accompaniments

Method

Preparation and Cooking

  1. 1

    Prepare the Cauliflower Steak

Remove the leaves from the romanesco cauliflower and cut it into thick slices (about 1 inch each). Brush both sides of the slices with olive oil and season with paprika, salt, and pepper.

  2. 2

    Grill the Cauliflower

Preheat a grill or grill pan over medium heat. Grill the cauliflower steaks for about 5-7 minutes on each side, until tender and nicely charred.

  3. 3

    Prepare the White Beans

In a small saucepan, heat the canned white beans over low heat until warmed through. Season with salt and pepper.

  4. 4

    Make the Pumpkin Puree Sauce

In a small bowl, mix the pumpkin puree with a pinch of salt, pepper, and a drizzle of olive oil. Set aside.

  5. 5

    Prepare the Arugula Pesto

In a food processor, combine arugula, Parmesan cheese, lemon juice, garlic, and a pinch of salt. Pulse until finely chopped, then slowly drizzle in olive oil until it reaches the desired consistency.

  6. 6

    Crispy Harissa Chickpeas

Preheat the oven to 400°F (200°C). Drain and rinse the chickpeas, then toss them in harissa paste. Spread them on a baking sheet and roast for about 20 minutes until crispy.

  7. 7

    Serve the Dish

On a plate, place the grilled cauliflower steak, top with warmed white beans, a dollop of pumpkin puree, and drizzle with arugula pesto. Garnish with crispy harissa chickpeas.
