Method

Bison Short Rib

    Sear the Bison

    Season the bison short ribs with salt and black pepper. In a large Dutch oven, heat olive oil over medium-high heat. Sear the ribs on all sides until browned, about 4-5 minutes per side.

    Sauté Vegetables

    Remove the ribs and set aside. In the same pot, add onion, carrot, and celery. Sauté until softened, about 5-7 minutes. Add minced garlic and cook for another minute.

    Deglaze and Braise

    Pour in red wine and beef broth, scraping up any browned bits. Return the bison ribs to the pot. Add thyme and bay leaves. Bring to a boil, then reduce heat to low, cover, and simmer for 2.5 - 3 hours until tender.

Garlic Mash

    Cook Potatoes

    In a large pot, cover diced potatoes with cold water and add a pinch of salt. Bring to a boil and cook until tender, about 15-20 minutes. Drain.

    Mash Potatoes

    Add minced garlic, butter, and milk to the drained potatoes. Mash until smooth and creamy. Season with salt and black pepper to taste.

Chef’s Veg

    Sauté the Vegetables

    In a skillet, heat olive oil over medium heat. Add seasonal vegetables and sauté until tender and slightly caramelized, about 7-10 minutes. Season with salt and black pepper.

Red Wine Demi

    Prepare Demi

    In a saucepan, combine red wine and beef broth. Bring to a boil and reduce until thickened, about 15-20 minutes. Stir in butter and season with salt and black pepper to taste.

Crispy Tobacco Onions

    Fry Onions

    In a bowl, mix flour, cornstarch, salt, and black pepper. Dredge the onion slices in the mixture. In a deep pan, heat oil over medium-high heat. Fry the onions until golden brown and crispy, about 3-4 minutes. Drain on paper towels.
