    Chop Vegetables

    Wash and chop the zucchini, tomatoes, broccoli, Maui onion, mushrooms, and spinach into bite-sized pieces.

    Beat Eggs

    In a mixing bowl, crack the 4 eggs and beat them until the yolks and whites are fully combined. Add a pinch of salt and black pepper to taste.

    Sauté Vegetables

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped Maui onion and sauté for 2-3 minutes until translucent. Then add the zucchini, mushrooms, and broccoli, and cook for another 3-4 minutes until they start to soften.

    Add Spinach and Tomatoes

    Stir in the spinach and tomatoes, cooking for an additional 1-2 minutes until the spinach wilts.

    Pour in Eggs

    Reduce the heat to low and pour the beaten eggs evenly over the sautéed vegetables in the skillet. Allow the eggs to set for about 2-3 minutes.

    Sprinkle the cheese evenly over the eggs and vegetables. Cover the skillet with a lid and let it cook for another 2-3 minutes until the cheese is melted and the eggs are fully cooked.
