    Prepare the Ingredients

    Dice the ham, bacon, and Portuguese sausage into small pieces. Chop the Maui onion and green onion finely. Slice the kamaboko into thin wedges.

Cooking the Omelette

    Cook the Meats

    In a large skillet, heat the olive oil or butter over medium heat. Add the diced ham, bacon, and Portuguese sausage. Cook until the bacon is crispy and the other meats are heated through, about 5-7 minutes. Remove from the skillet and set aside.

    Sauté the Onions

    In the same skillet, add the chopped Maui onion. Sauté until translucent, about 3-4 minutes. Add the green onion and cook for an additional 1-2 minutes.

    Whisk the Eggs

    In a mixing bowl, crack the eggs and whisk them together with salt and black pepper until well combined.

    Cook the Omelette

    Pour the egg mixture into the skillet over the sautéed onions. Reduce the heat to low and let it cook for about 2-3 minutes, gently lifting the edges to allow uncooked egg to flow underneath.

    Add Fillings

    Once the eggs start to set, evenly distribute the cooked meats and kamaboko over one half of the omelette. Sprinkle the shredded cheese on top of the fillings.

    Fold and Finish

    Carefully fold the other half of the omelette over the fillings. Cook for an additional 1-2 minutes until the cheese is melted and the eggs are fully cooked.
