    Preheat the Oven

    Preheat your oven to 325°F (165°C).

    Prepare the Turkey

    Remove the turkey giblets and neck from the cavity and pat the turkey dry with paper towels.

    Season the Turkey

    In a bowl, mix together olive oil, salt, black pepper, garlic powder, onion powder, rosemary, and thyme. Rub this mixture all over the turkey, including inside the cavity.

    Stuff the Turkey

    Place the lemon, carrots, celery, and onion inside the cavity of the turkey.

    Roast the Turkey

    Place the turkey breast-side up on a roasting rack in a roasting pan. Roast in the preheated oven for about 13-15 minutes per pound, or until the internal temperature reaches 165°F (75°C).

    Baste the Turkey

    Baste the turkey every 30 minutes with its own juices. If the skin gets too dark, cover it loosely with aluminum foil.

    Rest the Turkey

    Once done, remove the turkey from the oven and let it rest for at least 20-30 minutes before carving.

Gravy

    Collect Drippings

    After removing the turkey from the roasting pan, pour the drippings into a fat separator or measuring cup. Allow it to settle for a few minutes.

    Make a Roux

    In a saucepan over medium heat, add the fat from the drippings (about 0.5 cups) and whisk in the flour. Cook for about 2-3 minutes until golden brown.

    Add Broth and Drippings

    Gradually whisk in the turkey drippings and broth. Bring to a simmer and let it cook until thickened, about 5-10 minutes.

    Season the Gravy

    Season the gravy with salt and pepper to taste. If it's too thick, add a bit more broth to reach your desired consistency.

    Serve

    Serve the gravy hot alongside the carved turkey.
