    In a large bowl, combine soy sauce, Hawaiian sea salt, minced garlic, minced ginger, and chopped green onions. Mix well. Add the pork shoulder or chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 2 hours, preferably overnight.

    Prepare the Leaves

    If using ti leaves, wash them thoroughly under cold water. If using banana leaves, pass them over an open flame for a few seconds to make them more pliable. Lay out the leaves flat on a clean surface.

Wrapping

    Wrap the Meat

    Take a piece of the marinated pork or chicken and place it in the center of a ti or banana leaf. Fold the sides of the leaf over the meat, then roll it up tightly, forming a packet. Use kitchen twine or toothpicks to secure the wrap. Repeat with the remaining meat.

    Steam the Lau Lau

    In a large steamer pot, add 4 cups of water and bring to a boil. Once boiling, place the wrapped lau lau packets in the steamer basket, cover, and steam for about 3-4 hours, or until the meat is tender.
