Namasu Preparation

    Prepare the Vegetables

    Peel the daikon radish and carrot. Using a mandoline or a sharp knife, slice the daikon and carrot into thin strips (about 1-2 mm thick).

    Salt the Vegetables

    In a bowl, combine the sliced daikon and carrot. Sprinkle with salt and toss well. Let it sit for about 10 minutes to draw out excess moisture.

    Make the Dressing

    In a separate bowl, whisk together the rice vinegar, sugar, and sesame oil until the sugar is dissolved.

    Combine the Ingredients

    After 10 minutes, rinse the salted vegetables under cold water and drain well. Add the vegetables to the bowl with the dressing and toss to combine.

    Add pepper to taste and mix thoroughly. Adjust seasoning if necessary.
