Prepare Mochiko Chicken

    Marinate Chicken

    In a bowl, combine mochiko flour, soy sauce, minced garlic, salt, and pepper. Add the chicken thighs, ensuring they are well coated. Marinate for at least 30 minutes.

    Fry Chicken

    Heat vegetable oil in a frying pan over medium heat. Fry the marinated chicken pieces until golden brown and cooked through, about 5-7 minutes per side. Remove and drain on paper towels.

Prepare Teri Beef or Chicken

    Marinate Meat

    In a bowl, mix soy sauce, brown sugar, minced garlic, and sesame oil. Add the thinly sliced beef or chicken and let it marinate for at least 15 minutes.

    Cook Meat

    In a skillet over medium heat, cook the marinated meat until cooked through, about 4-6 minutes for beef and 3-5 minutes for chicken.

Prepare Katsu

    Prepare Breading Station

    Set up three bowls: one with flour, one with beaten eggs, and one with panko breadcrumbs. Season the flour with salt and pepper.

    Bread and Fry

    Dredge the meat in flour, dip into the egg, then coat with panko breadcrumbs. Heat vegetable oil in a pan and fry until golden brown and cooked through, about 4-5 minutes per side. Drain on paper towels.

Cook Rice

    Rinse Rice

    Rinse the short-grain rice under cold water until the water runs clear to remove excess starch.

    Cook Rice

    In a rice cooker or pot, combine the rinsed rice and water. Cook according to rice cooker instructions or bring to a boil, then reduce to low heat and cover for about 20 minutes until the water is absorbed.

Assemble and Serve

    Plate the Dish

    On a serving plate, arrange a portion of rice alongside the mochiko chicken, teri beef or chicken, and katsu. Garnish with pickled ginger, sesame seeds, and nori strips.
