Method

Prepare the Rice

    Rinse the Rice

    Place the sushi rice in a fine-mesh strainer and rinse under cold water until the water runs clear. This removes excess starch.

    Cook the Rice

    In a rice cooker or pot, combine the rinsed sushi rice and 2.5 cups of water. Cook according to the rice cooker's instructions or bring to a boil, then reduce heat, cover, and simmer for 18-20 minutes until the water is absorbed.

    Season the Rice

    In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture. Allow it to cool slightly.

Prepare the Filling

    Cook the Spam (or tofu)

    Slice the Spam (or tofu) into rectangles. In a skillet over medium heat, add sesame oil and pan-fry the slices until golden brown, about 2-3 minutes on each side.

    Add Soy Sauce

    Drizzle soy sauce over the cooked Spam (or tofu) and let it cook for another minute, allowing the flavors to meld. Remove from heat.

Assemble the Ko Musubis

    Prepare Nori

    Lay a sheet of nori on a clean, dry surface with the shiny side down. Cut the nori sheet in half if desired.

    Form the Rice

    Wet your hands with water to prevent sticking. Take a handful of seasoned sushi rice and form it into a rectangle, about the size of the Spam slice.

    Add Filling

    Place a piece of Spam (or tofu) on top of the rice block.

    Wrap with Nori

    Fold the nori over the rice and Spam, pressing gently to seal. You can use a bit of water to help seal the edges.

    Repeat the process with the remaining ingredients until all rice and filling are used.

Serve

    If desired, sprinkle chopped green onions and sesame seeds on top of the Ko Musubis before serving.
