Method

Prepare the Katsu

    Prepare the Chicken

    Season the chicken breasts with salt and pepper on both sides.

    Bread the Chicken

    Dredge each chicken breast in flour, dip in beaten eggs, and then coat with panko breadcrumbs.

    Fry the Chicken

    In a large skillet, heat the vegetable oil over medium-high heat. Fry the breaded chicken breasts for about 5-7 minutes on each side, or until golden brown and cooked through. Remove and let rest on paper towels.

Make the Curry Sauce

    Chop the Vegetables

    Finely chop the onion, carrot, and potato. Mince the garlic and ginger.

    Cook the Vegetables

    In a saucepan, heat a bit of oil over medium heat. Sauté the onion, garlic, and ginger until the onion is translucent. Add the carrot and potato, cooking for an additional 5 minutes.

    Add the Spices and Broth

    Stir in the curry powder, then add the broth, soy sauce, and sugar. Bring to a simmer and cook for about 15-20 minutes, or until the vegetables are tender.

Assemble and Serve

    Slice the fried chicken into strips.

    Serve the sliced katsu over a bed of cooked rice and generously ladle the curry sauce on top. Garnish with chopped green onions.
