Corned Beef Hash Patty

Prepare the Ingredients
In a large bowl, combine the shredded corned beef, diced potatoes, chopped onion, minced garlic, salt, and black pepper. Mix well until all ingredients are evenly incorporated.

Cook the Hash Patty
Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the corned beef mixture to the skillet, pressing it down to form an even layer. Allow it to cook for about 5-7 minutes until the bottom is golden brown.

Flip and Finish Cooking
Carefully flip the hash patty using a large spatula. Add the remaining tablespoon of olive oil around the edges, and cook for an additional 5-7 minutes until the other side is golden brown. Sprinkle with chopped parsley before removing from heat.

Cook the Rice
In a medium saucepan, bring 2 cups of water to a boil. Add 1 cup of long-grain rice and 1 teaspoon of salt. Stir once, reduce the heat to low, cover, and simmer for 18-20 minutes until the rice is cooked and the water is absorbed.

Fry the Eggs
In a non-stick skillet, melt 1 tablespoon of butter over medium-low heat. Crack the 2 eggs into the skillet. Cook until the whites are set and the yolks are cooked to your desired doneness. Season with salt and black pepper to taste.
