Rice or Mashed Potatoes

Method

Rice Preparation

  1. 1

    Cooking White or Brown Rice

    1. Rinse 1 cup of white or brown rice under cold water until the water runs clear. 2. In a pot, combine the rinsed rice with 2 cups of water and a pinch of salt. 3. Bring to a boil over medium-high heat, then reduce to low heat, cover, and simmer for 15-20 minutes (white rice) or 40-45 minutes (brown rice) until the water is absorbed. Fluff with a fork before serving.

Mashed Potatoes Preparation

  1. 2

    Making Mashed Potatoes

    1. Peel and chop 2 large potatoes into chunks. 2. Place the chopped potatoes in a pot, cover with cold water, and add a pinch of salt. 3. Bring to a boil and cook until potatoes are tender (about 15-20 minutes). 4. Drain the potatoes and return them to the pot. Add 2 tbsp of butter, 1 cup of milk, 1 tsp of salt, and 1 tsp of pepper. 5. Mash until smooth and creamy, adjusting the milk for desired consistency.

Salads and Vegetables Preparation

  1. 3

    Preparing Potato Macaroni Salad

    1. In a large bowl, combine 2 cups of potato macaroni salad (store-bought or homemade). 2. Chill in the refrigerator until ready to serve.

  2. 4

    Making Tossed Salad

    1. In a large bowl, combine 2 cups of mixed greens, 1 cup of halved cherry tomatoes, and 1 chopped medium cucumber. 2. For dressing, whisk together 2 tbsp of olive oil, 1 tbsp of vinegar, 1 tsp of salt, and 1 tsp of pepper. Pour over salad and toss to combine.

  3. 5

    Steaming Fresh Vegetables

    1. Rinse 2 cups of fresh vegetables (like broccoli, carrots, or green beans) under cold water. 2. Place them in a steamer basket over boiling water and cover. Steam for about 5-7 minutes until tender but still crisp. Serve immediately.
