Chicken Marinade

Method

Marinating the Chicken

  1. 1

    Prepare the Marinade

In a bowl, combine guava paste, soy sauce, minced garlic, lime juice, ground black pepper, and salt to taste. Mix until smooth.

  2. 2

    Marinate the Chicken

Place the chicken thighs in a resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring every piece is coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, or overnight for best flavor.

Preparing the BBQ Sauce

  1. 3

    Mix the BBQ Sauce

In a saucepan over medium heat, combine ketchup, guava juice, apple cider vinegar, brown sugar, Worcestershire sauce, paprika, and cayenne pepper. Stir well and bring to a simmer.

  2. 4

    Simmer the Sauce

Allow the sauce to simmer for about 15 minutes, stirring occasionally, until it thickens slightly. Remove from heat and set aside.

Cooking the Chicken

  1. 5

    Preheat Grill

Preheat your grill to medium-high heat. If using a charcoal grill, ensure the coals are covered with white ash.

  2. 6

    Grill the Chicken

Remove the chicken from the marinade, allowing excess to drip off. Place the chicken on the grill and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).

  3. 7

    Baste with BBQ Sauce

During the last few minutes of grilling, brush the chicken with the prepared guava BBQ sauce, turning occasionally to caramelize the sauce.

  4. 8

    Rest the Chicken

Once cooked, remove the chicken from the grill and let it rest for 5 minutes before serving.
