Prepare the Noodles

Cook the Saimin Noodles
Bring 4 cups of water to a boil in a large pot. Add the saimin noodles and cook according to the package instructions, usually about 3-5 minutes, until tender. Drain and set aside.
Prepare the Vegetables

Chop the Vegetables
While the noodles are cooking, chop the green onions, julienne the carrot, and shred the cabbage. Set the vegetables aside.
Cook the Eggs and Ham

Scramble the Eggs
In a bowl, beat the eggs and season with a pinch of salt. Heat 1 tablespoon of vegetable oil in a large frying pan over medium heat. Pour in the beaten eggs and scramble until fully cooked, about 2-3 minutes. Remove from the pan and set aside.

Cook the Ham
In the same pan, add another tablespoon of vegetable oil and sauté the cooked ham or spam until slightly crispy, about 3-4 minutes. Remove from the pan and set aside.
Fry the Saimin

Stir-Fry Everything Together
In the same frying pan, add all the cooked saimin noodles, chopped vegetables, scrambled eggs, and cooked ham. Pour in the soy sauce, sesame oil, oyster sauce, and black pepper. Stir-fry everything together over medium-high heat for about 5-7 minutes until the vegetables are tender and everything is heated through.
