    Prepare Ingredients

    Chop the green onions and carrot into small pieces. If using ham, bacon, Portuguese sausage, or SPAM, cut it into bite-sized cubes.

    Prepare Rice

    Ensure that the cooked rice is cold and separated to avoid clumping. If using leftover rice, it's best to refrigerate it overnight.

Cooking

    Cook the Eggs

    In a large skillet or wok, heat a small amount of oil over medium heat. Crack the eggs into the skillet, scramble them until fully cooked, then transfer them to a plate and set aside.

    Cook the Meat

    In the same skillet, add the chopped ham, bacon, Portuguese sausage, or SPAM. Cook until browned and heated through. Remove and set aside with the eggs.

    Sauté Vegetables

    Add a bit more oil if needed, then add the chopped carrots and cook for 2-3 minutes. Add the frozen peas and cook for another minute until heated through.

    Combine Everything

    Add the cold cooked rice to the skillet with the vegetables. Stir well to combine, breaking up any clumps. Then, add the cooked eggs and meat back into the skillet.

    Season the Rice

    Pour the soy sauce and sesame oil over the mixture. Season with salt and black pepper to taste. Stir everything together and cook for an additional 2-3 minutes until heated through.

Serving

    Plate the Dish

    Once everything is well combined and heated, transfer the fried rice to serving plates. Garnish with extra chopped green onions if desired.
