Method
Chicken Preparation
- 1
Prepare the Chicken
Rinse the whole chicken under cold water and pat dry with paper towels. Cut the chicken into pieces (wings, thighs, drumsticks, and breasts) if not already cut.
- 2
Marinate the Chicken
In a large bowl, mix buttermilk and hot sauce. Submerge the chicken pieces in the buttermilk mixture. Cover and refrigerate for at least 4 hours, preferably overnight.
Coating Mixture
- 3
Prepare the Coating
In a large mixing bowl, combine all-purpose flour, cornstarch, garlic powder, onion powder, paprika, salt, and black pepper. Mix well until evenly combined.
- 4
Dredge the Chicken
Remove the marinated chicken from the refrigerator. Shake off excess buttermilk and dredge each piece in the flour mixture. Ensure each piece is thoroughly coated. Place the coated chicken on a wire rack and let it rest for 15 minutes.
Frying
- 5
Heat the Oil
In a large, deep skillet or pot, heat vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer for accuracy.
- 6
Fry the Chicken
Carefully add the chicken pieces to the hot oil, being careful not to overcrowd the pan. Fry in batches if necessary. Cook for about 12-15 minutes per side or until the chicken is golden brown and reaches an internal temperature of 165°F (74°C).
- 7
Drain and Serve
Once cooked, remove the chicken from the oil and place on a wire rack or paper towels to drain excess oil. Let it rest for a few minutes before serving.
