Turkey Preparation

Preheat the Oven
Preheat your oven to 325°F (163°C).

Prepare the Turkey
Remove the turkey giblets and neck from the turkey cavity. Pat the turkey dry with paper towels.

Season the Turkey
Rub the entire turkey with olive oil, then sprinkle salt, black pepper, chopped rosemary, and thyme over the skin. Insert garlic cloves into the cavity.

Roasting the Turkey
Place the turkey breast side up on a rack in a roasting pan. Roast in the preheated oven for about 2.5 to 3 hours, or until the internal temperature reaches 165°F (74°C).

Sauté Vegetables
In a large skillet, melt the butter over medium heat. Add diced onion and celery, and sauté until softened, about 5 minutes.

Combine Ingredients
Stir in the diced apples, raisins, sage, salt, and pepper. Cook for an additional 5 minutes.

Mix Stuffing
In a large bowl, combine the sautéed mixture with cubed bread. Pour in the chicken broth gradually, stirring until the bread is moistened.

Stuff the Turkey
Stuff the turkey cavity with the apple raisin stuffing before placing it in the oven.
Gravy Preparation

Collect Drippings
Once the turkey is done roasting, remove it from the pan and let it rest. Pour the drippings from the roasting pan into a measuring cup, separating the fat from the liquid.

Make the Roux
In a saucepan, add the fat and heat over medium. Stir in the flour, whisking constantly until it turns golden brown.

Add Broth
Slowly whisk in the turkey drippings and chicken broth. Cook until thickened, about 5 minutes.

Season with salt and black pepper to taste. Serve warm with the turkey.
