Omelette Preparation

    Cook the Bacon

    In a skillet over medium heat, cook the bacon until crispy. Remove, crumble, and set aside.

    Sauté Vegetables

    In the same skillet, add the diced onion and bell pepper. Sauté for about 3-4 minutes until they are softened.

    Add Ham and Tomato

    Stir in the diced ham and tomato, cooking for another 2-3 minutes until heated through.

    Prepare the Eggs

    In a bowl, whisk together the eggs and season with salt and pepper.

    Cook the Omelette

    Pour the beaten eggs over the sautéed mixture in the skillet. Cook on medium-low heat until the edges start to set, then gently lift the edges with a spatula to allow uncooked eggs to flow underneath.

    Add Cheese

    Once the eggs are mostly set, sprinkle the shredded cheddar cheese on top. Cover the skillet and cook for another 2-3 minutes until the cheese is melted and the eggs are fully cooked.

    In a separate saucepan, melt the butter over medium heat. Stir in the flour to create a roux, cooking for about 2 minutes until golden.

    Add Beef Broth

    Gradually whisk in the beef broth, ensuring there are no lumps. Continue to cook and whisk until the gravy thickens, about 3-5 minutes.

    Season the Gravy

    Season the gravy with salt and black pepper to taste. Keep warm until ready to serve.

Serving the Omelette

    Carefully slide the cooked omelette onto a plate.
