    Chop the Vegetables

    Dice the Maui onion and bell peppers into small pieces for even cooking.

    Prepare the Eggs

    In a mixing bowl, crack the 4 large eggs and whisk them together with salt and black pepper until well combined.

    Sauté the Vegetables and Ham

    In a non-stick skillet, heat 1 tablespoon of olive oil or butter over medium heat. Add the diced Maui onion and bell peppers, and sauté for about 3-4 minutes until they are softened. Add the diced ham and cook for an additional 2 minutes until heated through. Remove the mixture from the skillet and set aside.

    Cook the Omelette

    In the same skillet, add another tablespoon of olive oil or butter. Pour in the egg mixture and allow it to cook undisturbed for about 2-3 minutes, or until the edges start to set.

    Add the Filling

    Once the omelette is almost set but still slightly runny on top, evenly distribute the sautéed vegetables and ham mixture over one half of the omelette. Sprinkle the shredded cheese over the filling.

    Fold and Finish Cooking

    Carefully fold the other half of the omelette over the filling. Cook for another 1-2 minutes until the cheese is melted and the omelette is fully set.

    Slide the omelette onto a plate and cut it in half if desired. Serve immediately while hot.
