    Marinate the Mahi Mahi

    In a shallow dish, combine the mahi mahi fillets with lemon juice, salt, and black pepper. Make sure the fish is well coated with the marinade. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.

    Set up a breading station by placing all-purpose flour in one shallow bowl, the cornstarch in another, and a mixture of beaten eggs and milk in a third bowl. Finally, place the panko breadcrumbs in a fourth bowl.

    Remove the marinated mahi mahi from the refrigerator. Dredge each fillet in flour, shaking off the excess. Next, dip it into the egg and milk mixture, allowing any excess to drip off. Finally, coat the fillet in panko breadcrumbs, pressing lightly to adhere. Repeat with all fillets.

    In a large, deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can check the temperature with a deep-fry thermometer.
