Method

Crust Preparation

  1. 1

    Make the Dough

In a large mixing bowl, combine the all-purpose flour, granulated sugar, and salt. Mix well.

  2. 2

    Add Butter

Cut the unsalted butter into small pieces and add it to the flour mixture. Use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.

  3. 3

    Add Ice Water

Gradually add the ice water, one tablespoon at a time, mixing with a fork until the dough begins to come together. You may not need all the water.

  4. 4

    Chill the Dough

Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

  5. 5

    Preheat Oven

Preheat your oven to 350°F (175°C).

  6. 6

    Roll and Cut

On a floured surface, roll out the chilled dough to about 1/8 inch thick. Cut into circles to fit into your tart pans.

  7. 7

    Bake the Crusts

Place the dough circles into tart pans, pressing gently to fit. Prick the bottoms with a fork, then bake for 15-20 minutes or until golden brown. Remove and let cool.

Filling Preparation

  1. 8

    Beat the Cream Cheese

In a mixing bowl, beat the cream cheese with an electric mixer until smooth.

  2. 9

    Add Sugar and Vanilla

Gradually add the powdered sugar and vanilla extract, mixing until well combined.

  3. 10

    Add Heavy Cream

Pour in the heavy cream and beat on high speed until the mixture is light and fluffy, about 2-3 minutes.

  4. 11

    Fill the Tarts

Spoon the cream cheese filling into the cooled tart crusts, smoothing the tops with a spatula.

Topping Assembly

  1. 12

    Prepare the Fruits

Wash and slice the fresh strawberries and kiwi as needed. Ensure the blueberries are clean.

  2. 13

    Top the Tarts

Arrange the prepared fruits on top of the filled tarts. You can create a pattern or simply scatter them as desired.

  3. 14

    Garnish

Add mint leaves on top for a fresh garnish.
