Prepare the Ingredients
Chop the Maui onion and asparagus into small pieces. If using fresh asparagus, blanch it in boiling water for 2-3 minutes until slightly tender, then drain and cool.

In a mixing bowl, whisk together the eggs, milk, salt, and black pepper until well combined and frothy.

Cook the Omelette
In a non-stick skillet, melt the butter over medium heat. Add the chopped Maui onion and asparagus, and sauté for 2-3 minutes until they are tender and fragrant.

Fold the Omelette
Using a spatula, carefully fold the omelette in half and cook for an additional 1-2 minutes until the eggs are fully set.

In a small saucepan, melt the stick of unsalted butter over low heat, ensuring it doesn’t boil.

In a heatproof bowl, whisk together the egg yolks and lemon juice until the mixture becomes thick and pale.
