Omelette Preparation

    Prepare the Ingredients

    Chop the Maui onion and asparagus into small pieces. If using fresh asparagus, blanch it in boiling water for 2-3 minutes until slightly tender, then drain and cool.

    In a mixing bowl, whisk together the eggs, milk, salt, and black pepper until well combined and frothy.

    Cook the Omelette

    In a non-stick skillet, melt the butter over medium heat. Add the chopped Maui onion and asparagus, and sauté for 2-3 minutes until they are tender and fragrant.

    Add Crab and Eggs

    Add the imitation crab meat to the skillet and stir gently to combine. Pour the egg mixture over the crab and vegetables, tilting the skillet to ensure even cooking. Cook for 4-5 minutes until the edges begin to set.

    Using a spatula, carefully fold the omelette in half and cook for an additional 1-2 minutes until the eggs are fully set.
