Cook the Noodles
Boil 1 liter of water in a large pot. Add the chow mein noodles and cook according to package instructions until al dente, usually about 5-7 minutes. Drain and set aside.

Make the Sauce
In a small bowl, mix the soy sauce, sesame oil, minced garlic, minced ginger, cornstarch, and 2 tablespoons of water. Stir until the cornstarch is dissolved and set aside.

Cook the Protein (if using)
In a large skillet or wok, heat a tablespoon of oil over medium heat. Add the cubed tofu or sliced chicken breast (if using) and cook until golden brown and cooked through, about 5-7 minutes. Remove from the skillet and set aside.

Stir-fry the Vegetables
In the same skillet, add another tablespoon of oil. Add the julienned carrots, sliced bell pepper, chopped green onion, and shredded cabbage. Stir-fry for about 3-5 minutes until the vegetables are tender but still crisp.

Combine Everything
Add the cooked chow mein noodles and the sauce to the skillet with the vegetables. Toss everything together to combine well, and cook for another 2-3 minutes, allowing the noodles to absorb the sauce.

If you cooked protein, add it back to the skillet and toss to combine. Serve hot and enjoy your Chow Mein Doodles!
