Crust Preparation

    Preheat the Oven

    Preheat your oven to 325°F (160°C).

    Mix Crust Ingredients

    In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Stir until the mixture resembles wet sand.

    Form the Crust

    Press the crumb mixture evenly into the bottom of a 9-inch springform pan. Use the bottom of a flat measuring cup to pack it tightly.

    Bake the Crust

    Bake the crust in the preheated oven for about 10 minutes until set and lightly golden. Remove from the oven and let it cool while preparing the filling.

Filling Preparation

    Prepare the Cream Cheese

    In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy, about 2-3 minutes.

    Add Sugar and Sour Cream

    Gradually add the granulated sugar and sour cream to the cream cheese, continuing to mix until fully incorporated.

    Incorporate Vanilla and Eggs

    Add the vanilla extract and mix until combined. Then, add the eggs one at a time, mixing on low speed just until blended after each addition.

    Add Flour

    Finally, add the all-purpose flour and mix on low speed until just combined. Be careful not to overmix.

    Pour into the Crust

    Pour the cream cheese filling over the cooled crust in the springform pan, smoothing the top with a spatula.

    Bake the Cheesecake

    Bake in the preheated oven for about 60-70 minutes, or until the center is set but slightly jiggly. Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for 1 hour.

    Chill the Cheesecake

    After cooling, refrigerate the cheesecake for at least 4 hours, preferably overnight, before serving.
