Method

Crust Preparation

  1. 1

    Make the Dough

In a large mixing bowl, combine the all-purpose flour and salt. Add the cold, cubed butter and mix until the mixture resembles coarse crumbs.

  2. 2

    Add Ice Water

Gradually add the ice water, one tablespoon at a time, mixing gently until the dough comes together. Do not overmix.

  3. 3

    Chill the Dough

Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

Filling Preparation

  1. 4

    Prepare the Filling

In a mixing bowl, whisk together the eggs, heavy cream, salt, and black pepper until well combined.

  2. 5

    Add Cheese and Vegetables

Stir in the shredded cheese, diced vegetables, chopped bacon or ham, and fresh herbs into the egg mixture until evenly distributed.

Assembly and Baking

  1. 6

    Preheat the Oven

Preheat your oven to 375°F (190°C).

  2. 7

    Roll Out the Dough

On a lightly floured surface, roll out the chilled dough to about 1/8-inch thickness. Cut the dough into circles and fit them into a greased muffin tin.

  3. 8

    Fill the Crusts

Pour the filling mixture into each prepared crust, filling them about 3/4 full.

  4. 9

    Bake the Quiches

Bake in the preheated oven for 20-25 minutes, or until the filling is set and the crust is golden brown.

  5. 10

    Cool and Serve

Remove from the oven and allow to cool for a few minutes before carefully removing the quiches from the muffin tin. Serve warm or at room temperature.
