Preparation
Prepare the Dipping Sauce
In a bowl, mix together the prepared horseradish, mayonnaise, and lemon juice until well combined. Set aside in the refrigerator for the flavors to meld.
Prepare the Batter
In a shallow dish, combine the flour, cornmeal, garlic powder, paprika, salt, and black pepper. In another bowl, whisk together the eggs and buttermilk.
Coat the Pickles
Dip each pickle slice into the egg mixture, allowing excess to drip off, then dredge in the flour mixture, ensuring they are coated evenly. Set aside on a wire rack.
Fry the Pickles
In a large pot or deep fryer, heat the oil over medium-high heat until it reaches 350°F (175°C). Carefully add the coated pickle slices in batches, frying until golden brown and crispy, about 2-3 minutes. Remove with a slotted spoon and drain on paper towels.
Serve
Serve the fried pickles hot with the horseradish dipping sauce on the side.
