1. Prepare the Chicken
Season the chicken breasts with salt and pepper. Dredge each breast in flour, dip in beaten eggs, and coat with panko breadcrumbs.
2. Fry the Chicken
Heat oil in a large skillet over medium-high heat. Once hot, add the coated chicken breasts and fry until golden brown and cooked through, about 5-7 minutes per side. Remove and drain on paper towels.
3. Prepare the Vegetables
Slice the onion and tomato. Set aside.
4. Assemble the Sandwich
On the bottom half of each brioche roll, spread a generous amount of pimento cheese. Place the fried chicken on top, drizzle with whiskey BBQ sauce, and layer with onion, tomato, and shredded lettuce. Top with the other half of the brioche roll.
5. Serve
Serve immediately while hot with extra BBQ sauce on the side if desired.
