Method

Preparing the Salmon

  1. 1

    Marinate the Salmon

In a small bowl, combine olive oil, lemon juice, minced garlic, salt, and black pepper. Whisk together until well mixed.

  2. 2

    Coat the Salmon

Place the salmon fillets in a shallow dish and pour the marinade over them. Make sure each fillet is coated evenly. Cover and refrigerate for at least 30 minutes.

Grilling the Salmon

  1. 3

    Preheat the Grill

Preheat the grill to medium-high heat (about 375°F to 400°F).

  2. 4

    Grill the Salmon

Remove the salmon from the marinade and place it on the grill. Cook for 5-6 minutes on each side, or until the salmon flakes easily with a fork.

Preparing the Vegetables

  1. 5

    Prepare the Vegetables

While the salmon is marinating, wash and chop the asparagus, bell peppers, and zucchini into bite-sized pieces.

  2. 6

    Season the Vegetables

In a large bowl, toss the chopped vegetables with olive oil, salt, and black pepper until evenly coated.

Grilling the Vegetables

  1. 7

    Grill the Vegetables

Place the seasoned vegetables in a grill basket or on the grill grates. Grill for about 8-10 minutes, stirring occasionally, until they are tender and slightly charred.

Serving

  1. 8

    Plate the Dish

Once the salmon and vegetables are grilled, serve the salmon fillets alongside the grilled seasonal vegetables on a plate. Garnish with additional lemon wedges if desired.
