Prepare the Filling

    In a bowl, whisk together the eggs, milk, salt, and black pepper until well combined and slightly frothy.

    In a skillet over medium heat, add the olive oil. Once hot, add the chorizo sausage and cook until browned and cooked through, about 5-7 minutes.
