Chicken Marinade

Method

Marinating the Chicken

1

Prepare the Marinade

In a large bowl, mix together olive oil, lime juice, garlic powder, cumin, chili powder, salt, and black pepper to create the marinade.

2

Marinate the Chicken

Add the boneless, skinless chicken breasts to the marinade, making sure they are well coated. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

Grilling the Chicken

3

Preheat the Grill

Preheat your grill to medium-high heat (about 375°F to 450°F or 190°C to 232°C).

4

Grill the Chicken

Remove the chicken from the marinade, allowing excess marinade to drip off. Place the chicken on the preheated grill. Grill for 6-7 minutes on each side, or until the internal temperature reaches 165°F (74°C).

5

Rest the Chicken

Once grilled, remove the chicken from the grill and let it rest for 5 minutes before slicing it into strips.

Assembling the Tacos

6

Warm the Tortillas

Warm the corn tortillas on the grill for about 30 seconds on each side, until pliable.

7

Build the Tacos

On each tortilla, layer the grilled chicken strips, shredded lettuce, diced tomatoes, shredded cheese, a dollop of sour cream, fresh cilantro, and avocado slices.

8

Serve

Serve the tacos immediately with lime wedges on the side for an added burst of flavor.
