Method

Cake Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C). Grease four ramekins with butter and dust with flour to prevent sticking.

  2. 2

    Melt Chocolate and Butter

In a heatproof bowl, combine the dark chocolate and unsalted butter. Melt them together in a microwave in 30-second intervals, stirring in between, until smooth and completely melted.

  3. 3

    Mix Sugar and Eggs

In a separate mixing bowl, whisk together the granulated sugar, large eggs, and egg yolks until the mixture is pale and slightly thickened.

  4. 4

    Combine Mixtures

Add the melted chocolate and butter mixture into the egg mixture. Stir until well combined.

  5. 5

    Add Flour and Vanilla

Sift the all-purpose flour into the chocolate mixture and gently fold it in using a spatula. Add the vanilla extract and mix until just combined.

  6. 6

    Fill Ramekins

Evenly distribute the batter into the prepared ramekins, filling them about 3/4 full.

  7. 7

    Bake

Place the ramekins in the preheated oven and bake for 12-14 minutes, or until the edges are firm but the center is still soft.

  8. 8

    Cool Slightly

Remove the ramekins from the oven and let them cool for 1 minute. Carefully run a knife around the edges to loosen, then invert onto a plate.

Serving Instructions

  1. 9

    Serve with Ice Cream

Serve the warm chocolate lava cakes immediately with a scoop of vanilla ice cream on top.

  2. 10

    Garnish

Dust with powdered sugar and add fresh berries if desired for garnish.
