Ravioli Dough Preparation
Make the Dough
In a large mixing bowl, combine flour and salt. Create a well in the center, add eggs and olive oil. Mix until a dough forms. Knead on a floured surface for about 10 minutes until smooth. Wrap in plastic and let it rest for 30 minutes.
Beef Filling Preparation

In a skillet over medium heat, cook ground beef and onion until beef is browned. Add garlic, salt, and pepper. Cook for another 2 minutes. Remove from heat and stir in Parmesan cheese. Let cool.
Mushroom Filling Preparation

In a skillet, sauté chopped mushrooms until soft. Add garlic, salt, and pepper. Remove from heat, and mix in ricotta and Parmesan cheese. Let cool.

Ravioli Assembly
Assemble Ravioli
Roll out the dough into thin sheets. Cut into squares. Place a small spoonful of filling (beef, mushroom, or cheese) in the center of each square. Fold over and seal edges with a fork.

Cook the Ravioli
Bring a large pot of salted water to a boil. Drop in ravioli and cook for 3-5 minutes until they float. Remove with a slotted spoon.
