Prepare the Ingredients

Juice the Lemon
Roll the lemon on the countertop to release juice, cut it in half, and extract 1 oz of fresh lemon juice using a citrus juicer or by hand.
Make Simple Syrup (if not using store-bought)
Combine equal parts sugar and water in a small saucepan. Heat over low heat until the sugar dissolves completely. Allow to cool before use.

In a cocktail shaker, add 2 oz of gin, 1 oz of fresh lemon juice, and 0.5 oz of simple syrup.
Shake the Mixture
Fill the shaker with ice and shake vigorously for about 15-20 seconds until well chilled.
Serving
Strain and Serve
Strain the mixture into a tall glass filled with ice.
Add Soda Water
Top the drink with 4 oz of soda water and gently stir to combine.
Garnish
Garnish with a lemon wheel and fresh mint leaves for a refreshing finish.
