Syrup Preparation

Prepare the Chai Tea

Boil 2 cups of water in a saucepan. Once boiling, remove from heat and steep the chai tea bags for 5 minutes. Remove the tea bags and set the tea aside.

Cook the Peaches and Apricots

In a separate saucepan, combine the diced peaches, chopped apricots, and the prepared chai tea. Bring the mixture to a simmer over medium heat.

Add Sugar and Lemon Juice

Stir in 1 cup of sugar and 2 tablespoons of lemon juice into the simmering fruit mixture. Continue to simmer for about 15 minutes, until the fruits are soft and the syrup has thickened slightly.

Cool and Strain

Remove the saucepan from heat and let the syrup cool for a few minutes. Once cooled, strain the mixture through a fine mesh sieve into a bowl to separate the syrup from the solids. Discard the solids and let the syrup cool completely.

Assembly

Prepare the Glasses

Fill glasses with ice cubes to your preference.

Add the Syrup

Pour about 2-3 tablespoons of the spiced peach-apricot chai syrup into each glass over the ice.

Add Cava

Top each glass with chilled Cava or sparkling wine, filling to the rim. Stir gently to combine.

Garnish

Garnish each drink with a slice of lemon for added flavor and presentation.
