Preparation of Meat Filling

    Prepare the Chiles

    Remove the stems and seeds from the dried guajillo and ancho chiles. In a dry skillet over medium heat, toast the chiles for about 2-3 minutes until fragrant. Transfer the chiles to a bowl and cover with hot water to soak for 15-20 minutes until softened.

    Cook the Beef

    In a large pot or Dutch oven, heat a splash of oil over medium-high heat. Season the beef chuck roast with salt and pepper, then sear on all sides until browned. Remove the beef and set aside.

    Make the Sauce

    In a blender, combine the soaked chiles (drained), onion, garlic, cumin, oregano, and a cup of the beef broth. Blend until smooth, adding more broth if needed to achieve a pourable consistency.

    Simmer the Beef

    Pour the blended sauce into the pot used to sear the beef. Return the beef to the pot, add the remaining beef broth, and bring to a boil. Reduce heat, cover, and simmer for about 2-3 hours until the beef is tender and shreds easily.

    Shred the Beef

    Once the beef is cooked, remove it from the pot and let it cool slightly. Shred the beef using two forks and return it to the pot to soak up more flavor.

Assembly & Cooking

    Prepare the Tortillas

    Warm the corn tortillas on a skillet over medium heat for about 30 seconds on each side until pliable.

    Fill the Tortillas

    Place a generous amount of shredded beef in the center of each tortilla. Top with shredded cheese and a sprinkle of fresh cilantro.

    Fold and Cook

    Fold the tortillas in half to create a taco shape. In the same skillet, add a small amount of oil and cook the folded quesabirrias for about 2-3 minutes on each side until golden brown and the cheese is melted.

    Serve the quesabirrias with lime wedges and a side of sour cream for dipping.
