The famous scramble with shredded carnitas served with colorful pico, rice, and a side of refried beans, and a side of country potatoes. This is what we call comfort food.

For the Egg Machaca

    Prepare the Vegetables

    Dice the onion and bell pepper into small pieces.

    Cook the Vegetables

    In a large skillet, heat the olive oil over medium heat. Add the diced onion and bell pepper, and sauté until softened, about 5-7 minutes.

    Scramble the Eggs

    In a bowl, whisk the eggs and season with salt and black pepper. Pour the eggs into the skillet with the sautéed vegetables. Stir gently until the eggs begin to set.

    Add Carnitas

    Once the eggs are partially cooked, add the shredded carnitas and continue to cook until the eggs are fully scrambled and cooked through. Stir in the chopped cilantro before serving.

For the Pico de Gallo

    Chop Ingredients

    Finely chop the tomatoes, red onion, and jalapeño.

    Mix Pico de Gallo

    In a bowl, combine the chopped tomatoes, red onion, jalapeño, and chopped cilantro. Squeeze the lime juice over the mixture, and add salt to taste. Mix well and let sit for 10 minutes to allow the flavors to meld.

    Prepare Refried Beans

    Heat the refried beans in a small saucepan over low heat until warmed through.

    Prepare Rice

    If using leftover rice, simply reheat it in the microwave or on the stovetop.

    Cook Country Potatoes

    Peel and dice the country potatoes. Boil them in salted water until tender, about 10-15 minutes. Drain and serve.
