Prepare the Fries

    Fry the Frozen Fries

    In a large pot or deep fryer, heat the vegetable oil to 180°C (350°F). Once hot, carefully add the frozen French fries in batches and fry until golden brown and crispy, about 4-6 minutes. Remove with a slotted spoon and drain on paper towels.

Cook the Proteins

    Prepare the Protein

    In a skillet over medium heat, add your choice of diced grilled chicken, diced al pastor, diced steak, or shredded carnitas. Sauté for about 5-7 minutes or until heated through. Set aside.

Assemble the Dish

    Layer the Ingredients

    On a large serving platter, place a generous layer of the crispy fries. Evenly distribute the cooked proteins over the fries.

    Add Cheese

    Sprinkle the shredded jack and cheddar cheese evenly over the fries and protein. Place the platter under a broiler for 2-3 minutes, or until the cheese is melted and bubbly.

    Top with Toppings

    Drizzle the spicy chipotle aioli over the cheesy fries. Top with pico de gallo, jalapeño slices, and pickled onions.

    In a separate skillet, add a small amount of oil or butter and heat over medium-low. Crack the eggs into the skillet and cook until the whites are set but the yolks remain runny, about 3-4 minutes. Carefully remove from the skillet.
