Method

Vegetable Sides

  1. 1

    Prepare the Broccoli

Begin by washing the broccoli florets thoroughly under cold running water. Cut them into bite-sized pieces.

  2. 2

    Sauté the Broccoli

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant. Add the broccoli florets, salt, and black pepper. Stir well and cook for 5-7 minutes, until the broccoli is tender but still vibrant green.

Starch Sides

  1. 3

    Boil the Potatoes

Peel the potatoes and cut them into quarters. In a large pot, add the potatoes and cover them with water. Bring to a boil and cook for about 15-20 minutes, or until tender.

  2. 4

    Mash the Potatoes

Drain the potatoes and return them to the pot. Add the butter, milk, chives, and salt. Mash until smooth and creamy. Adjust seasoning if necessary.

Grain Sides

  1. 5

    Cook the Quinoa

Rinse the quinoa under cold water using a fine-mesh strainer. In a medium saucepan, combine the rinsed quinoa and vegetable broth. Bring to a boil, then reduce the heat to low, cover, and simmer for 15 minutes or until all the liquid is absorbed.

  2. 6

    Fluff and Season the Quinoa

Remove the quinoa from heat and let it sit covered for 5 minutes. Fluff with a fork, then stir in the lemon juice, chopped parsley, and salt. Serve warm.
